Winemaker notes:
The style is medium body, cherry and strawberry fruited with some savoury notes of dried foliage. 25% new oak, 9 months maturation.
Vintage:
2018 was a very good year, which delivered good yields with beautiful concentration and flavour. the summer was cool & dry with small amounts of rain allowing the fruit to ripen slowly retaining good natural acidity.
Colour:
Medium, ruby.
Aroma:
Satsuma plums, some herbals spice, black cherry, a touch of spice and some cranberry tartness.
Palate:
Black plum, black cherry, spice, earthy notes, dried herbs and a touch of spicy oak.
Winemaking:
Partially destemmed and open top fermented with the inclusion of around 10-15% whole bunches. The wine underwent indigenous yeast ferment before being pressed to a mixture of around 10% new oak piéce (228lt), one, two and three year old piéce (228lt) and some in stainless steel tanks. The wine aged for around 10 months before a light filtration and bottling.
